Hello Paleo Sweet and Sour Meatballs! I’m so glad eat meat meet you.

It’s January, so I know all of you are looking for healthy meals that are delicious and easy. Let’s be real…finding simple meals is so important for us busy mommas and working ladies. We don’t always have the time or energy to spend hours in the kitchen {hello pregnancy}, but we want to nourish our bodies with healthy, whole foods!

Asian recipes almost always win in my house when I need a quick dinner! They’re healthy, take less than 30 minutes to prepare, and taste amazing. These Paleo Sweet and Sour Meatballs are always a hit, and everyone in my family loves them! Plus they are gluten-free, dairy-free and refined sugar free!

A few notes about these Paleo Sweet and Sour Meatballs: 

Meatballs: It only takes a small amount of coconut flour to bind the meatballs together beautifully! No need to use breadcrumbs or other ingredients that usually make them off-limits for people with dietary restrictions. You can use either ground turkey or 93/7 lean ground beef to make this recipe, I have used both with great results!

Method: I have this thing about being 1 million percent sure that my meat is fully cooked…so I like to bake the meatballs and use my trusty Thermoworks Thermapen to be absolutely certain that they’ve reached 160 degrees F. All you rare steak, pink-in-the-middle hamburger people freak me out. For real. You can also brown and cook the meatballs in a skillet {still checking the temperature for doneness} and then just add the sauce to the same skillet. Either way they will turn out great!

Sauce: To keep the recipe paleo be sure to use a paleo-approved ketchup! I usually use coconut sugar as the sweetener. I have also had success with honey and  regular, organic sugar {not paleo}! If you do not need to keep this recipe paleo, you can substitute soy sauce for the coconut aminos!

Paleo Sweet and Sour Meatballs

Total Time: 30 minutes

Yield: Serves 2-4

Ingredients

Instructions

    Making the meatballs:
  1. Preheat oven to 400 degrees F. Grease a baking sheet, set aside.
  2. In a small bowl, mix together the dry ingredients (coconut flour, onion powder, garlic powder, salt and pepper). Set aside.
  3. In a large bowl mix together the meat, coconut aminos, milk and egg until well combined.
  4. Add the dry ingredients to meat mixture. Stir until well combined.
  5. Roll the mixture into 1-2” balls and place evenly spaced on your prepared baking sheet. (This step could be pretty messy and sticky, but don’t worry they will bake very nicely)!
  6. Bake in the preheated oven for 10-15 minutes, until tops are slightly browned or internal temperature reaches 160 degrees F.
  7. Making the sauce:
  8. While meatballs are baking, in a small bowl whisk together the sauce ingredients: sugar, vinegar, ketchup, garlic salt and coconut aminos. Set aside.
  9. Putting it together:
  10. Transfer the baked meatballs into a pot or pan (I use a 4 quart saucepan) and pour sauce over them. Cook on medium heat until sauce begins to bubble, stirring every 3 minutes.
  11. Mix 1 TBS tapioca flour into 1½ TBS cold water and add to sauce.
  12. Continue to cook over medium heat until sauce thickens and the meatballs are evenly coated.
  13. Serve warm with stir-fried veggies, spaghetti squash, or your favorite Asian sides!

Notes

This recipe feeds my family (2 adults, 3 kids) perfectly. If you have more mouths to feed I recommend doubling it!

Seriously this recipe is SO good! I am not a huge meat eater, but I could eat these all day long! Even my kids gobble them up! Serve with some stir-fried veggies, rice, egg noodles, or whatever your favorite Asian side dish may be! The possibilities are endless!

That being said…we have been so crazy sick in my house this week I can’t even tell you {and won’t begin to try}. This one knocked me out for over two days {like I didn’t leave my bedroom}. So far 3 of the 5 of us have gotten this bug, with Gabe and Ritch being the last men standing…for now. Here’s to hoping they either get it quick so we can call it done, or that they miraculously avoid it! UPDATE: Less than 30 minutes after posting this another one bit the dust. Poor Gabers. Now to see if my super-human, sickness avoiding husband will succumb or will stand strong.
