These Blender Peanut Butter Banana Oatmeal Waffles are a delicious healthy breakfast recipe! They are gluten-free, dairy-free, refined sugar free and have no butter or oil!

Breakfast is, hands down, my favorite meal of the day.

I think it’s because, in my house, during breakfast peanut butter is always the star of the show. Whether it’s in a smoothie, baked in a bar, or made into a fun healthy breakfast like these Blender Peanut Butter Banana Oatmeal Waffles…peanut butter is the best part of waking up {in my humble opinion}!

Kid-Friendly Waffle Recipe!

This recipe comes to you just in time for Mother’s Day! This year, Vitamix is calling all moms to encourage our kids to play in the kitchen! In my experience, it’s been so important to let my little ones have fun with food. They love helping me cook and bake, especially when it comes to using the Vitamix! Seriously, Bethany and Gabe will often rush to be the first to get to turn the blender on and off! {Can you blame them}?!

So this year, I created this delicious Peanut Butter Banana Oatmeal Waffles in partnership with Vitamix! It is a great recipe to let your kids help with! You can even send this healthy waffle recipe to daddy so he can make these peanut butter waffles with the kids and serve mommy a nice breakfast in bed! 😉

Also, we all know that waffles are just as fun to eat as they are to make! Let your kids use their creativity to top them with delicious fruit, nuts and seeds! If you’re really feeling crazy, pull out the whipped cream or chocolate syrup for an extra-special treat! My tribe had so much fun brainstorming fun ways to decorate our waffles!

These gluten-free Oatmeal Waffles are seriously healthy and seriously delicious. They are gluten, dairy and refined sugar-free, have zero butter or oil, and are loaded with fiber and protein! A truly special recipe to make on a lazy Sunday morning, that won’t leave you in a sugary carb-a-licious coma for the rest of the day!

How to make This Peanut Butter Oatmeal Waffles Recipe

These gluten-free waffles are SO easy to make!

  1. Start by grinding the oats in the Vitamix and then mixing all the dry ingredients together in a separate bowl. I only recommend using a high-powered blender like the Vitamix, because it ensures that all the ingredients will be well blended and the waffle batter will be silky smooth!
  2. Next, use the Vitamix to blend the wet ingredients. I LOVE that, thanks to my Vitamix, I can make waffles that are full of fruit and high-protein ingredients like peanut butter instead of loads of sugar and butter/oil!

Peanut Butter Oatmeal Waffles: Substitutions

I tested this recipe with a few variations, but as always I think they taste the best as written! 🙂

  • Peanut Butter: If peanut butter isn’t your favorite {not sure if we can be friends}, or you have a family member with a peanut allergy {the only acceptable reason not to eat the good stuff}, you can substitute any nut or seed butter with great results.
  • Old-fashioned oats: If you keep oat flour on hand, you can simply use 3/4 cup oat flour and skip the step of grinding the oats in the Vitamix.
  • Tapioca flour: Cornstarch or arrowroot powder are acceptable substitutes for Tapioca flour. I did make a batch of these Blender Peanut Butter Banana Oatmeal Waffles using 100% oat flour (1 cup total), but they were much denser and took longer to cook than when tapioca flour was used. Since tapioca flour {or cornstarch or arrowroot powder} is lighter than oat flour, it gives the waffles a fluffier texture. My kids loved both versions and couldn’t tell the difference! 😉
  • Almond milk: Any non-dairy or dairy milk works great.
  • Coconut sugar: The only substitute I tried was raw, organic sugar…and had great results! I suspect any granulated sweetener would work well!

Gluten-Free Peanut Butter Oatmeal Waffles

Ingredients 
 

Instructions 

  • Preheat a waffle maker to the desired heat setting (recommended: medium-high).
  • Place oats into the container of your Vitamix and secure lid. Blend for 15 seconds or until they become a fine powder (the consistency of flour).
  • Pour oat flour into a medium mixing bowl.
  • Add tapioca flour, baking powder, baking soda, salt cinnamon and coconut sugar to the oat flour and stir to combine. Set aside.
  • Add almond milk, peanut butter and banana to the container of your Vitamix and secure the lid.
  • Blend on low speed, gradually increasing to high. Blend on high for 15 seconds or until the mixture is smooth.
  • Add vanilla and egg and blend for 10 seconds, until just combined.
  • Pour wet ingredients from the Vitamix container into the dry ingredients in the mixing bowl. Stir until mixture is smooth and there are no lumps.
  • Let mixture sit for 2-5 minutes to thicken.
  • Cook on medium-high heat in your waffle maker for about 4 minutes (or until your waffles reach the optimal crispiness and brownness…which will vary depending on your waffle maker)!
  • Serve warm!
