I hope you all had a fabulous Thanksgiving. We absolutely did and I can’t wait to share more about it in my moments post later this week! But for now, I am very excited to share this recipe for Paleo Baked Chocolate Donuts with a White Chocolate Glaze with you!

From what I have observed, and experienced in my own life, donuts are an integral part of holiday celebrations that just don’t get enough press. I mean I can’t tell you how pictures I saw of people enjoying donuts on Thanksgiving morning or on Black Friday before they went out to shop until they dropped.

It doesn’t seem to matter to most of us that the celebrations themselves include so many treats, from cookies to cakes to pies. Breakfast deserves to be special too! But if you’d like to enjoy all the fun of donuts without the sugar crash and not-so-wholesome ingredients, then you need to make these Paleo Baked Chocolate Donuts with a White Chocolate Glaze! They’re crazy delicious, much healthier than your average donut and can be dressed up for any occasion!

These Baked Chocolate Donuts are seriously the BEST….

These Paleo Baked Chocolate Donuts rank in my top 3 favorite recipes to come from my kitchen to yours this year! Seriously they are so good for so many reasons! Here are a few:

  1. They have the best texture ever. They’re a cross between a cake donut and a brownie and I couldn’t love them any more if I tried. I literally stored them in the back of my refrigerator hoping that my kids would forget about them so I could eat them all myself! 😉
  2. The chocolate flavor is deep and rich and it only comes from cocoa powder {no melted chocolate to fuss with}! I usually scoff and chocolatey treats that contain no melted chocolate or chocolate chips. However this recipe has made me a believer!
  3. They’re so so SO much healthier than any other donut you will ever eat!  These Paleo Baked Chocolate Donuts are baked and not fried. They are gluten & grain free, dairy-free and have NO refined sugar. Plus they actually are packed with protein and fiber! A sweet breakfast treat that would leave you in a sugar coma by 10 AM!

How to make Paleo Baked Chocolate Donuts

Here are a few tips on making this recipe!

  1. Separate eggs. Whipping the egg whites separately is a key step in making these donuts the perfect texture. Using a standing mixer makes whipping the whites incredibly easy. However it is possible to do it by hand, it just takes some time and muscle!
  2. Glaze. This recipe makes enough glaze to coat the donuts twice. If you want a classic, thin glaze {as in the picture above}, halve the glaze recipe and only apply one coat. If you’d like a thicker glaze {as in the picture below} make the full recipe. Then glaze each donut once, let the glaze cool and harden, then apply a second coat!
  3. Grate the white chocolate. Measure white chocolate in it’s grated state, not in solid chunks.

Paleo Baked Chocolate Donuts: Substitutions 

This recipe is absolutely the best as it’s written, but there are a few possible substitutions. Please, please, please don’t change the amount and type of flour used in this recipe, you absolutely need to use blanched almond flour to achieve the best results!

  • Coconut oil. Melted butter or ghee can be used in place of coconut oil! Just be sure to choose an ingredient that complies with your dietary needs!
  • Honey. Maple syrup is a great substitute for honey {although I do prefer honey}.

White chocolate Glaze

I always keep raw cocoa butter on hand because it’s a great dairy-free baking staple. If you do not keep it around, you can substitute white chocolate melts or a white chocolate bar. Please be sure to buy real white chocolate. The ingredient must contain cocoa butter, and must not contain corn syrup.  Using white chocolate will result in a sweeter glaze and you may need to add less powered sugar to get it to thicken!

  • Powdered sugar. Use this recipe to make paleo powdered sugar! You can use regular powdered sugar just understand that it is not paleo. Making your own will result in a more brownish-colored glaze, so be aware of this.

Ingredients 
 

Chocolate Donuts:

White Chocolate Glaze*

Instructions 

Chocolate Donuts

  • Preheat oven to 350 degrees F. Grease a 6-cavity donut pan, set side.
  • Separate eggs, whip whites until stiff peaks form, set aside.
  • Combine almond flour, cocoa powder, baking soda and salt in a small bowl, set aside.
  • In a microwave safe dish, heat coconut oil and honey together until the coconut oil is melted (about 30-60 seconds). Stir until smooth.
  • Add apple cider vinegar, eggs yolks and vanilla to the coconut oil/honey mixture.
  • Add dry ingredients and stir until combined.
  • Gently fold in egg whites until mixture is homogenous.
  • Evenly distribute the batter between the 6 donut cavities. Smooth out the tops of each donut.
  • Bake at 350 for 12-15 minutes or until the tops are set and golden brown.
  • Allow donuts to cool in pan for 5-10 minutes, then transfer to a cooling rack to cool completely.

White Chocolate Glaze:

  • While donuts are cooling, make the glaze.
  • Melt coconut oil and cocoa butter together in the microwave or on the stove over medium heat.
  • Stir until smooth and let cool for about 5 minutes.
  • Add powdered sugar and stir until combined.

Putting it together:

  • Pour glaze over cooled donuts and let stand at room temperature or in the refrigerator until hardened.
  • Store in an airtight container in the refrigerator for up to 5 days!

Notes

*This recipe makes enough glaze coat the donuts twice. If you want a classic, thin glaze, halve the glaze recipe and only apply one coat. If you'd like a thicker glaze, make the full recipe. Then glaze each donut once, let the glaze cool and harden, then apply a second coat! 
**Regular white chocolate disks or a bar {not paleo} can be used in place of raw cocoa butter. Be sure to choose a variety that contains cocoa butter and does not contain corn syrup. 
***Use this recipe to make your own paleo powdered sugar!

Other noteworthy celebrations that usually involve donuts are birthdays, all of the national holidays {Valentine’s, St. Patty’s, etc. etc.} and just your average Saturday {because everyone one of those is worthy of celebrating if you ask me}!
