Peanut Butter. Cookie Dough. Ice Cream Sandwiches.

With no dairy, gluten or sugar. It might seem too good to be true but pinch yourself because you aren’t dreaming.

I’m holding onto summer {read: still eating copious amounts of ice cream} a little longer and sharing this delicious frozen treat with you all. Because lets face it, if you live somewhere warm {hello Utah} summer weather doesn’t really end until mid to late September. I always find myself wishing the pools would stay open for a few more weeks after Labor Day.

Since I have no control over the pool schedules, I’ve decided to determine my own dessert destiny by eating these Peanut Butter Cookie Dough Ice Cream Sandwiches as long as the thermometer reads temps over 80.

These Peanut Butter Cookie Dough Ice Cream Sandwiches are basically my dream come true. One of the reasons I don’t enjoy store-bought ice cream sandwiches is because they are always filled with vanilla ice cream. I mean seriously what’s that about?! Those of us who would choose chocolate over vanilla 10 times out of 10 have to resort to making our own treats.

And since it’s an indisputable fact that cookie dough > baked cookies, and peanut butter basically needs to be in everything, it’s no mystery how this recipe effortlessly and naturally was born in my kitchen. And it needs to make an appearance in yours too, like stat! Because not only are they delicious but they’re super easy to make!

How to make Cookie Dough Ice Cream Sandwiches

Just a few notes on the method of these beauties.

  1. I use two identical 8×4″ loaf pans to make these to ensure that the top and bottom layer are the same. If you only have one pan you could put some wax paper in between the layers and freeze them on top of each other. Or you could freeze them in two separate “batches.”
  2. Line the pans with wax paper to ensure easy removal. Make sure to line the pan that will be used as the bottom layer with wax paper all the way up the sides. Since you’ll be filling it with the ice cream and topping it with the second layer, you want to make sure that the whole thing can be easily removed!

Cookie Dough Ice Cream Sandwich Recipe: Substitutions

Here are a few possible substitutions you could make in this recipe! However {as always} I recommend making them exactly as written.

  • Oat flour. always make my own oat flour by grinding old-fashioned oats in my Vitamix.  You can also substitute all-purpose gluten-free flour for the oat flour!
  • Peanut Butter. Any nut or seed butter will work in this recipe. If you use almond butter you may need to increase the amount by 2 TBS.
  • Coconut oil. Butter or vegan butter like Earth Balance can be used in place of coconut oil.
  • Coconut sugar. Any granulated sugar works well as a substitute for coconut sugar!
  • Almond milk. Coconut or cashew milk also work well and taste delicious in this recipe! Really any non-dairy or dairy-full milk would work beautifully!

Vegan Ice Cream Recipes.

3 cups of any variety of ice cream works great! Just be sure it fits your dietary needs. I recommend using one of these recipes:

Peanut Butter Cookie Dough Ice Cream Sandwiches

Ingredients 
 

Instructions 

  • Line two identical 8x4” loaf pans with wax paper, set aside. (Make sure one of the pans is lined all the way up the sides)
  • In a small bowl combine the dry ingredients (oat flour, sea salt, baking soda and coconut sugar). Set aside.
  • In a medium bowl mix together the peanut butter and coconut oil until combined.
  • Add honey, vanilla and almond milk and stir until combined.
  • Add dry ingredients into the wet mixture and mix until completely combined.
  • Add chocolate chips and stir until they are evenly distributed in the dough.
  • Put an equal amount of batter in the bottom of each prepared pan (just over ¾ cup) and press until flat and even.
  • Place in the freezer until hardened (1 hour)
  • Measure out 3 cups of ice cream and transfer it to a bowl to soften.
  • Pour the softened ice cream into the loaf pan that is completely lined with wax paper. Smooth it out so it’s evenly distributed on top of the cookie dough layer.
  • Remove the second cookie dough layer from its pan and place it on top of the ice cream. Gently press it down so that it’s firmly in place.
  • Put the loaf pan into the freezer until hardened.
  • Cut and serve!
