Egg white

Granulated Sugar

In a small bowl, combine sugar, sea salt, and cinnamon, set aside. Be sure to mix well so the ingredients are evenly distributed.

In a large mixing bowl, whip egg white and vanilla with a whisk until frothy. I use whisk and beat by hand, but you could use a hand-held mixer.

Add almonds to wet mixture and stir until evenly coated.

Once almonds are coated, sprinkle the dry ingredients over the almonds and stir until evenly distributed.
