This Paleo Homemade White Chocolate Jello is a light and delicious healthy dessert recipe with only 6 ingredients! It's gluten-free & dairy-free and can be served in elegant little dishes or made into shapes for a fun kid-friendly treat!
Open the can of coconut cream and carefully break through the hard top with a knife.
Pour about ¼ cup of the liquid from the can into a large bowl.
Add 1 TBS gelatin to the liquid and stir to combine. Let the mixture sit for at least 5 minutes.
Meanwhile, add the rest of the contents of the can into a small saucepan.
Heat over medium heat and stir until smooth.
Add grated cocoa butter and salt to the coconut cream and stir until the cocoa butter is completely melted.
Turn off the heat but leave the pan on the warm burner and add the vanilla and powdered sugar. Taste test the sweetness and add more powdered sugar if desired.
Pour the warm mixture from the pan into the bowl with the gelatin/coconut milk mixture and whisk to combine.
Pour the mixture into small jars or molds and refrigerate for at least 6 hours or overnight.
Serve cold with a garnish of whipped cream, pomegranates or a drizzle of chocolate!
