One boiling, add the old-fashioned oatmeal and sir.
Return the mixture to a boil and boil for 15 seconds.
Then, turn off the heat, cover, and let the pot of oatmeal sit for 5 minutes on the warm burner.
After 5 minutes, the liquid should be absorbed.
Stir in peanut butter, cinnamon, brown sugar and sea salt.
Transfer to bowls.
Serve warm with additional topping such as peanut butter, fresh fruit, chocolate chips, nuts, coconut etc.

Ingredient Notes & Substitutions
Water. I always make oatmeal with water! However, I tested this recipe with whole milk too and it was delicious. I'm sure you can substitute your preferred dairy milk, almond milk, coconut milk, etc.
Old-fashioned oatmeal. You can use quick-cooking oats, the texture will just be different and the mixture will thicken up in a shorter amount of time.
Peanut Butter. Choose your favorite variety. You can use any nut or seed butter.
Brown Sugar. Honey and maple syrup are great substitutes for brown sugar.
Sea salt. I suggest tasting the oatmeal and adjusting the salt as needed. If you use a salted peanut butter you may not need to add any.
Store/FreezeStore leftover peanut butter oatmeal in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to 2 months. Reheat gently in the microwave or on the stovetop.
