Instructions
Finely dice the pineapple and red onion and chop the cilantro.
Add the ingredients to a medium-sized bowl with a lid. Start by adding ¼ tsp sea salt.
Stir to combine.
Secure the lid and transfer the salsa to the refrigerator to chill for at least 1 hour.
When ready to serve, stir, taste and adjust salt as necessary.
Transfer the pineapple salsa to a serving bowl. Then, garnish with extra cilantro, onions, etc. and serve chilled.

Note:
Make sure to very finely dice the ingredients so the salsa can easily be scooped with chips.
Ingredient Substitution Notes
Fresh Pineapple.
make sure your pineapple is ripe and sweet. I don't suggest substituting canned.
Red onion.
Yellow or white onion are good substitutes for red.
Lime juice.
fresh or bottled both work well.
To add heat:
finely dice a jalapeño pepper and mix it into the recipe.
Store
Store leftover pineapple salsa in an airtight container in the refrigerator for 3-5 days.
