This Crock Pot Chili recipe is an easy meal to feed a crowd. A hearty chili is flavored with a delicious homemade chili seasoning and cooked low and slow all day. Learn how to make chili in the crock pot for your football watching party, Halloween, etc.
Onion. Use your favorite variety: red, white, or yellow.
Minced garlic. if you don’t have minced garlic on hand, you can substitute garlic powder and add it with the rest of the spices.
Bell peppers. any color variety of bell pepper works well in this recipe! If you like to add some heat, add some spicier peppers like jalapeño.
Fire roasted tomatoes. I love the flavor of fire roasted tomatoes, but regular diced tomatoes taste great as well. can absolutely substitute regular canned, diced tomatoes as well!
Green Chiles. Use mild or spicy depending on your preferences.
Kidney Beans. You can add an extra 1 or 2 cans of beans of choice in this recipe. I use one can because we have some people who don't love beans in our family. Choose kidney beans, black bean, or Cannellini beans, or great northern beans.
Corn. Fresh and frozen corn both work well in this slow cooker chili.
Spice mixture. I have written this recipe with the spice ratios and combination that tastes the best. You can more chili powder, or some cayenne powder to add heat! You can use a store-bought seasoning of your choosing (preferably organic), or make your own homemade chili seasoning and use 6 Tablespoons.
Store/FreezeStore leftover slow cooker chili in an airtight container in the refrigerator for up to 5 days, or in the freezer for up to two months.Reheat in the microwave or on the stovetop. If frozen, let thaw at room temperature or in the refrigerator overnight before reheating.
