This yellow rice recipe is richly flavored with spices like turmeric, garlic, cumin, coriander and cilantro and is easy to make in 30 minutes. It's a vibrant, healthy side dish!
In a small bowl, combine rice, garlic powder, onion powder, cumin, turmeric, coriander, sea salt and pepper, set aside.
Bring chicken broth (or water) to a boil in a 5-quart saucepan.
Once boiling, add the rice mixture, cover and return to a boil.
Once boiling, reduce heat to a simmer and simmer (covered) until the rice is cooked (about 20 minutes)
After the rice is cooked, turn off the heat. Then, stir in the cilantro. Cover the pan and let it rest on the warm burner for 5-10 minutes.
Fluff with a fork and serve warm

Ingredient Substitution Notes
Basmati rice. Or use long grain white rice. You can use brown rice, but it takes longer to cook (45-50 minutes ) and has a slightly nuttier taste.
Garlic powder/onion powder. If desired, you can cook ½ cup finely onion and 1 tablespoon minced garlic in the saucepan with 1 tablespoon olive oil, then add the broth, bring to a boil and proceed with the recipe - instead of using powders.
Chicken broth. water works in place of chicken broth.
