February was a sweet month with another birthday celebration, skiing and vacation!

“I can’t remember all the times I tried to tell myself to hold on to these moments as they pass.”
Welcome to “Moments” here on JoyFoodSunshine. This is when I pause my usual recipe content, and take time to share our family’s favorite moments from the month!
Here are some highlights from February 2025!
Instagram highlight: Eggless Cookies!
I did a super fun taste test with my family to see if they could tell the difference between my “normal” chocolate chip cookies and my eggless chocolate chip cookies – check out the reel to see the outcome: Eggless Chocolate Chip Cookies Reel.
Things I’m Loving
Here are some things that have made my life easier this month! Don’t forget I always share my favorites in my Amazon Profile!
- Packing Cubes: we traveled this month, and I decided to pack each of my kids’ clothes in their own packing cube. It make it so easy to unpack when we arrived at our destination. Instead of sorting through all their clothes and putting them away in drawers, I just pulled out their cube! A total travel game changer!
- Collagen Powder. I use this organic collagen powder every day in my morning smoothie! I love it!
- 14 Ounce Travel Mug. I am trying to stop for coffee less when I’m out and about (especially co-op days), so I bought this yeti travel mug and love it so much! It keeps my coffee warm far longer than a starbucks cup! 😉
- Vuori Joggers. I just bought a second pair because I have been wearing them every day for over a year and needed another. They’re so comfy!
- Softest Sweatshirt. This is a lightweight sweatshirt that is cute and comfy – perfect for spring!I have it in two colors and love it!
Recipes I’m Making on Repeat
Here are some recipes I made for my family this month:

Snapshots
We celebrated our third birthday of 2025 – my sweet miss Keilah turned SIX. She is growing up so much and I just can’t believe it. She asked for a “spa day” which I happily obliged. We went to a local spa where the girls got to swim in the pool/hot tub and get their nails done.
She asked for eclair cake for dessert and if you can see the pure joy in that scrunchy little smile – you know she had the best day ever.
We skied as much as we could this month! Zach is still learning but Keliah is a total rockstar!
One day we went skiing and this little guy fell asleep on me for about an hour after. I felt so emotional for a couple days after because it reminded me how much I miss having a sweet baby to hold all the time.
For 12 years I had a baby in my arms (usually in a carrier). I even bought coats so that they would fit over me and my babies in a carrier because I just preferred to hold them. In the grocery store, on hikes, around the house, I always had a sweet little stowaway with me and I loved it. I miss it so much it hurts sometimes!
How was your February? Ready for spring? I know I am!
Thank you for sharing your delicious recipes and also your sweet family photos! Such a beautiful family! I love your posts. You’ll get those babies back before you know it – grandchildren! My grands are mostly teens now but I was their “granny-nanny” when they were babies! Best job ever! They grew up on “heirloom” recipes I learned how to make from my mother and my mother-in-law, plus new recipes I have discovered and loved along the way! Lately I’ve taught them how to cook “survival” food – French toast, grilled cheese, scrambled eggs, mac and cheese and more! Good food from tried and true recipes is such a wonderful legacy families enjoy and never forget. Thank you for sharing! Blessings.
Thank you Pat! I love the term “survival food!” Right now in our life that’s what we’re living on – scrambled eggs always come to the rescue! 🙂
Hi, I like your cookie recipes!
Thank you Landon! Any cookie recipes you’d like me to create that you don’t see on my site?!
