When the weather’s nice you’ll likely find us swimming or hiking or spending the afternoon playing at the park, which means two things: 1) we are always eating and 2) we’re always on the go.

Truth be told, most of the prepackaged snacks out there don’t meet my standards of health and nutrition, so I almost always make my own. These Date, Coconut & Peanut Butter Granola Bars are one of our favorite snacks to bring along on our adventures. They are super healthy, sweetened only with dates, and loaded with protein and fiber! They also freeze beautifully, so it’s easy to make a batch and always have them on hand for snack emergencies! 😉

love being able to use dates as a sweetener in healthy treats – like these Date, Coconut & Peanut Butter Granola Bars – instead of sugar!  In this recipe we take dates that have been soaked and use the Vitamix to blend them together with the other wet ingredients. Then we mix them in with the dry ingredients and bake them up for a delicious, portable, hearty snack!

But portable is a funny word because I live in Utah, where the summers are super hot. So even snacks that seem to be impossible to melt usually turn into a gooey mess on our outings! However, the Petunia Pickle Bottom Inter-mix System has totally solved this problem for me! Now I can blend up healthy snacks in my Vitamix and pack them into my Intermix system where they’re kept cool until we’re hungry!

For real, this past weekend we went hiking and I brought along these Date, Coconut & Peanut Butter Granola Bars!  They stayed cold inside the cool pixel bag for hours! Seriously, when I pulled them out, even the container they were stored in was still cold! No melted chocolate chips for this momma! {Cue happy dance}!

One more thing to note…I am a big fan of backpack diaper bags! Especially now that I have four kids, hands-free is the only way to be! I can go about our day with a baby in the carrier while holding one {or two} of my other kids’ hands and still have everything I need with me on my back {and look cute doing it}! Seriously, hiking, grocery shopping, walking to and from the car, you name it…it’s easier when I have two free hands!

I scrambled all over this waterfall with a newborn in tow and a 4 year old boy who was bawling his eyes out because he didn’t like the cold water {see the pic below…real life folks}. Ritch carries Naomi in a larger hiking backpack and Bethany is old enough to climb around in the mountains on her own…but she still needs momma’s hand every now and then! 😉

Ok, now those of you who are just here for the recipes {Hi} let’s talk about these beauties!

Date, Coconut & Peanut Butter Granola Bars: Method 

These granola bars are super easy to make, but I want to note a couple of things about the method!

#1) Soak your dates: Seriously, in my first trial run of this recipe I did not soak my dates and it did not go well. Simply measure out your dates into a glass container and pour boiling water over them until they’re completely submerged. Soak for 15-30 minutes or until the dates are soft. Then drain the dates, add them to the container of your Vitamix and get on with the recipe!

#2) Blending: there are two options when making this recipe. If you like chunkier granola bars more similar to store-bought varieties, then do not blend the dry ingredients {follow the recipe as it’s written}. If you prefer a less chunky bar, you can toss the dry ingredients into your Vitamix and blend everything together at the end. You’ll need to scrape the sides and use the tamper if you opt to do that though, because the mixture will be super thick.

#3) Bake the bars: These Date, Coconut & Peanut Butter Granola Bars need to be baked. I tried them as no-bakes but they were only good when eaten straight out of the freezer! So please don’t forget this step!

Date, Coconut & Peanut Butter Granola Bars: Substitutions 

As always I recommend making the recipe exactly as written, however there are some possible substitutions for this recipe that will not compromise the taste or texture of these bars!

Almond milk: Any non-dairy milk will work beautifully in this recipe! I recommend using unsweetened varieties!

Peanut butter: Any nut or seed butter can be used in place of peanut butter.

Old-fashioned oats: I have also used quick-cooking oats with great results.

Almond meal: If you need to leave out the almond meal you can simply increase the amount of oats by 1/4 cup.

Date, Coconut & Peanut Butter Granola Bars

Total Time: 35 minutes

Yield: 10 granola bars

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line an 8x8” square baking pan with parchment paper and grease, set aside.
  3. Mix oats, coconut, almond meal, salt and cinnamon together in a large bowl, set aside.
  4. Add the soaked dates and almond milk to the container of your Vitamix (or other high-powered blender).
  5. Blend, starting on low speed and increasing to high until ingredients are well blended but not totally smooth.
  6. Scrape down the sides of your container and add the peanut butter and vanilla extract. Blend again until mixture is smooth.
  7. Pour wet mixture into the bowl containing the dry ingredients. Mix by hand until well-combined.
  8. Pour batter into the prepared baking dish and spread until evenly distributed. If desired, add chocolate chips to the top.
  9. Bake in the preheated oven for 20-25 minutes or until the top is set and the edges are golden brown.
  10. Set dish on a wire rack to cool. Once completely cooled, cut into bars and enjoy.
  11. Store in the refrigerator or freezer in an airtight container!
