This chocolate chip coconut flour cookies are easy to make in one bowl – no mixer required. They’re a delicious, gluten-free cookie recipe ready from start to finish in less than 30 minutes.

I often get asked about using coconut flour in my cookie recipes, so I created these chocolate chip coconut flour cookies.
Recipes using coconut flour need to be developed carefully, because coconut flour absorbs almost twice as much wet ingredients than all-purpose flour or almond flour. I tested many different combinations before I landed on this delicious recipe.
No, these coconut flour cookies don’t taste just like normal chocolate chip cookies – they’re a little softer and cakier, and not as chewy. But they are delicious and easy to make using a mixer!
They have a rich buttery flavor and honestly taste even better the day after they’ve been baked!

How to Make Coconut Flour Chocolate Chip Cookies
Let’s walk through how to make this recipe step-by-step. As always, you can watch the video for more guidance!
Begin by preheating your oven to 350 degrees Fahrenheit (177 degrees Celsius). Then, line a baking sheet with a silicone baking mat and set it aside.
Next, in a large bowl, whisk together the melted butter, sugar, and honey. This is the bowl you’ll be making the entire recipe in, so choose a size that fits all the ingredients.
Then, whisk in the in eggs and vanilla until smooth.
Next, add the coconut flour, sea salt, baking soda and baking powder and stir to combine.
Let the batter sit for 2 to 5 minutes, or until thickened.
Once the batter has thickened, stir in the chocolate chips.
Then, use a 1 ½ or 2 Tablespoon cookie scoop to portion dough and put it on the baking sheet.
Then, gently press the tops down so the cookies are in a round shape. (The dough will be a little sticky, you can’t really roll it but it works trust me)!
Bake the coconut flour cookies in the preheated oven for 8-10 minutes. Until the cookies are set on top and lightly browned on the bottom.
Once they have finished baking, remove the cookies from the oven and immediately sprinkle the tops with flaky sea salt.
Set the baking sheet on a wire rack and let the cookies cool on the baking sheet for 15 minutes before transferring them to a wire cooling rack to cool completely.
Serve
These chocolate chip coconut flour cookies are delicious straight from the oven – they’re slightly gooey and a little cakey.
However, I personally think they taste best after they have sat at room temperature overnight, because then they become a little more chewy. I suggest trying them both ways and telling me which you prefer!
Store/Freeze
You can store these coconut flour cookies in an airtight container at room temperature for 2-3 days, in the refrigerator for 1 week or in the freezer for up to 2 months.
