These breakfast tacos are a flavor-packed, light and delicious breakfast. Seasoned eggs, bacon, and cheese are wrapped in tortillas and served with your favorite taco fixings.

This breakfast tacos recipe has become a staple in our house. They’re easy to make in less than 15 minutes and everyone absolutely loves them, because let’s be honest – tacos for breakfast is always a great idea!

In reality though, I make breakfast tacos for dinner more often than I do for breakfast! They’re perfect for when I don’t have any meat thawed but need to get a nutritious meal on the table in a hurry!

In this recipe, Mexican-seasoned eggs are scrambled, cooked in bacon grease and served with crumbled bacon, cheese and your favorite tacos fixing like guacamole, salsa and pico de gallo.

Breakfast Tacos: Ingredients & Substitutions

  • Bacon. choose your favorite variety of bacon.
  • Heavy cream. whole milk or half and half are good substitutes.
  • Sharp cheddar cheese. I love the intense flavor of sharp cheddar, however you can use your favorite cheese such as: mild/medium cheddar, Colby Jack, pepper jack, etc.
  • Pico de gallo. salsa is a good substitute for pico de gallo.

How to Make Breakfast Tacos

We’ll walk through this breakfast tacos recipe together step-by-step to ensure your success! You can also watch the video for further guidance.

Cook the Bacon

Begin by cooking the diced bacon in a nonstick skillet  over medium-low heat until browned.

Then, turn off the heat, use a slotted spoon and transfer the bacon to a plate or bowl, but save the grease in the pan.

Cook the Eggs

Once the bacon is cooked, make the scrambled eggs. Begin by whisking the ingredients for the eggs in a medium mixing bowl.

Then, add the eggs to the bacon grease in the pan and turn the heat on to low.

Cook the eggs, stirring often until the eggs are scrambled.  (low and slow is the best way to cook scrambled eggs). Be careful not to over-cook.

Assemble the Breakfast Tacos

Once the bacon and eggs are cooked, it’s time to assemble the tacos. Begin by putting the eggs and bacon onto the tortillas.

Then, add the cheese and your favorite toppings.

Serve

Serve the breakfast tacos warm with your favorite Mexican recipes for a nutritious and hearty breakfast or dinner!

Store

I suggest storing any leftover eggs and crumbled bacon in an airtight container in the refrigerator. Then you can reheat it and make fresh tacos to enjoy when you want to!

Instructions 

Cook the bacon
