Ok, now that I just excitedly yelled the name of today’s recipe at you…let me start by saying that chocolate covered bananas are one of my favorite frozen treats. However, over the course of my 31 years of life, I have found store-bought bananas to be seriously lacking.

Every time I buy a chocolate covered banana they never meet my expectations. They are usually covered in some sort of weird chocolate shell coating that has been put on so sparingly you’d think there was a world-wide shortage of chocolate or something. I know I know, I sound negative…but I take my dessert seriously!  So, after one too many disappointing store-bought experiences I started making my own homemade  Frozen Peanut Butter Chocolate Covered Bananas, and I’ve never looked back!

Making these Frozen Peanut Butter Chocolate Covered Bananas at home gives you the control! Not only do you get to determine the quality and amount of the ingredients {good bye forever crummy, thin chocolate coating}, but you also can tailor this recipe to your dietary needs! Dairy-free? No problem! Don’t like dark chocolate? Easily remedied! Need a smaller serving size? Done and done!

A side note: My oldest daughter LOVES helping me take blog photos. When she sees me setting up a shoot she always asks, “Do you need cute little hands for these pictures mom?!” I usually say yes and let her help out even if I don’t use the photos. It’s fun being able to spend time together in the kitchen! Now back to the recipe…there are two things that set these Frozen Peanut Butter Chocolate Covered Bananas apart from all the rest.

#1) High-quality chocolate…and lots of it! No thinly-applied, weird mystery chocolate coating allowed here. My favorite chocolate to use is Ghirardelli 60% Dark Chocolate Chips! Just be sure to use your favorite and apply it generously!

#2) Peanut butter! The only thing that could make a combination that includes bananas and chocolate even better is the addition of peanut butter! These Frozen Peanut Butter Chocolate Covered Bananas have a thick band of peanut butter spread right onto the bananas! Then they’re dipped in a mixture of chocolate and peanut butter and drizzled with even more peanut butter! Because if you’ve been around this blog for even a minute, then you know my motto when it comes to peanut butter is, “the more, the better!”

Frozen Peanut Butter Chocolate Covered Bananas: Method

There are a few things to note about making these delectable frozen treats!

#1) Using a baking sheet lined with wax paper will ensure that the bananas don’t stick to the pan as they freeze.

#2) Be sure to put your stick of choice in each banana before you pop them into the freezer. But to be honest, you don’t really need a stick. I actually prefer eating them without one. But for my kids’ sake I stick a stick in there to prevent a huge mess!

#3) A firm, no-stir peanut butter {like this} is much easier to work with in this recipe. OR a natural peanut butter that has been stirred and refrigerated so that it is firmer.  If your peanut butter is a natural, runnier variety then I recommend freezing the bananas before spreading the peanut butter on them. The more liquidy peanut butter will harden when it comes into contact with the frozen banana, preventing you from making a peanut buttery mess!

#4) Feel free to cut these bananas into any size you wish! I like halves because that’s about the size of dessert I enjoy eating after dinner! Leave them whole or cut them into small circles for a quick, bite-sized frozen treat!

Frozen Peanut Butter Chocolate Covered Bananas: Substitutions

There are three ingredients. One is nonnegotiable {bananas}. The other two could be played around with if you must…

Peanut Butter: Any nut or seed butter would work if you have a peanut allergy! I’m guessing a delicious flavored almond butter would be great! I have only tried peanut butter so I cannot guarantee great results if you use anything else!

Dark Chocolate Chips: Any variety of chocolate works great here. If I’m making these for people who don’t love dark chocolate I use half milk chocolate and half dark chocolate. You can also use your 1 1/2 cups of your favorite chocolate bar chopped.

Frozen Peanut Butter Chocolate Covered Bananas

Prep Time 15 minutes
Total Time 6 hours
Servings 8 frozen bananas

Ingredients

Instructions

  1. Line a large baking sheet with wax paper. Set aside.
  2. Cut the bananas in half lengthwise.
  3. Push a lollipop stick or popsicle stick 1 ½ inches into the flat side of each banana.
  4. Carefully spread 1 TBS of creamy peanut butter lengthwise on each banana and evenly space them on the prepared baking sheet.
  5. Place the baking sheet into the freezer for at least 3 hours (and up to one day), or until bananas and peanut butter are completely frozen.
  6. Once bananas are frozen, melt together 1 ½ cups of dark chocolate chips and ¼ cup peanut butter in the microwave or over a double boiler. Stir until smooth and homogenous.
  7. Pour melted chocolate/peanut butter mixture into a tall, narrow glass.
  8. Remove bananas from the freezer and, working quickly, carefully dip each banana in the chocolate/peanut butter mixture then set it back on the cold, wax-paper lined baking sheet. (If the coating is too thick, use a spatula to carefully scrape some of the chocolate/peanut butter mixture back into the glass before it freezes to the banana).
  9. Repeat until all the bananas are covered in chocolate. You may need to use a spatula to scrape the chocolate from the glass and spread it onto the last banana so it can get completely covered.
  10. Place the baking sheet back into the freezer for at least two hours for the bananas to set.
  11. Optional: Once the chocolate has hardened in the freezer you can drizzle melted peanut butter over the bananas using a fork. Then place them back in the freezer to harden!
  12. Serve frozen!

Recipe Notes

*If you use a runnier, natural peanut butter variety, make sure it has been stirred and stored in the refrigerator to firm up before using it. I also recommend putting the stick into the bananas, freezing them, and then putting the peanut butter on to the frozen bananas so it adheres better. Or you can use an already-firm no-stir variety and put it on before the banana is frozen! **You may use any variety of chocolate!
