Happy Thursday! Today’s recipe is for all you snack-loving, party people out there! These almond butter energy bites are made with only seven (7!) ingredients and come together in less than 10 minutes! These little balls of chocolatey bliss are crazy delicious and are paleo, gluten-free, dairy-free, vegan and are only sweetened with dates! Simply almonds, dates and a few other ingredients come together beautifully to make the snack of your dreams!
I have to pause briefly to say…”I’m in love, I’m in love, and I don’t care who knows it!” 🙂 I have been on a quest to find the very best nut butters (of the peanut and almond varieties)…and while I am planning to write a post about my “research” 😉 I just need to tell you that Barney Almond butter is AHMazing! It’s smooth with a creamy texture and rich flavor! Plus their “bare” variety only has ONE ingredient…almonds! It’s definitely a new pantry staple for me!
Ok…now back to the recipe! Whenever I make energy bites I always start by processing my dates and nuts together first. These are the two most difficult ingredients to process, so I like to be sure they’re finely ground and mixed well before adding the rest.
Once you have all your ingredients in the food processor they will start to clump together. When that happens you are done! Be careful because you do not want to over process this mixture or the balls will turn out feeling greasy. The picture below shows how the optimal “clumpiness” you are looking to achieve for energy bite perfection.
Once your mixture is clumptastic, you can begin rolling your energy bites! I like to keep them small (about 1 TBS of mixture per ball), but you can make them any size you like! Everyone in my family LOVES these. My husband, who usually doesn’t care for my “healthy” treat options (because he’d rather eat jelly beans and snickers bars) raves about these. My kids think I’m feeding them cookies for a snack (#bossmom)! And I like to enjoy them in the silence that follows all three of my babes settling in to their nap/quiet time in the afternoon. 🙂
You can leave your bites bare, or you can drizzle them with extra almond butter! I think they taste best cold, so I store them in an airtight container in the fridge or freezer!
- 2 cups pitted dates
- 1 cup almonds
- 2 TBS almond butter
- 1 TBS unsweetened almond milk
- 2 TBS cocoa powder
- ½ tsp vanilla
- ¼ tsp salt
- More almond butter for drizzling (optional)
- Line a baking pan with wax paper, set aside. (You will not be baking these, you just need a place to set your rolled bites as you make them).
- Put dates and almonds in your food processor fitted with an “S” blade. Process until mixture in fine and homogeneous.
- Add the rest of the ingredients (almond butter, almond milk, cocoa powder, vanilla and salt) to your food processor and process until mixture just starts to clump together (see picture).
- Roll 1 TBS portions of your “dough” into balls and place them on your prepared baking sheet.
- Transfer to an airtight container to save for later! These can be stored at room temperature, but will last longer when kept in the fridge or freezer! I think they taste the best cold/frozen!
- If your almond butter isn’t drizzling consistency from the jar, gently warm it in the microwave or on the stovetop until it is runny enough to drizzle on!
Now for some snack time chit chat. We are potty training my son and so far it’s going really well! Since he’s a full year older than my daughter was when she was potty trained, he understands it much better than she did. He’s on this independence kick and wants to do everything himself (hallelujah!!!), so he’s rocking the undies like a champ.
The only thing I do NOT understand (because I’m a lady) is how in the world that boy gets pee on the back of his shirt! He’ll come out of the bathroom and I notice a big wet spot on his back! I asked my husband how something like that can happen (you know…physics) and even he is stumped! Luckily it’s happening less and less as he gets used to the mechanics of it all…but still! And of course it never happens when I’m in there because he’s extra careful when he has an audience. 😉
Also…the other day Gabe went in to go potty and there was some toilet paper in there (someone is still learning how to flush). Before I could even realize what was happening (and I was not distracted) he reached his chubby little hand into the toilet, stirred the paper around and then put that same hand in.his.mouth! YUCK! I screamed (so so loud) because it was so SO gross and he just looked at me! I tried to explain the depth of disgustingness in what he did, but he just shrugged, washed his hands and went about his business. BOYS…sigh…
I’m super grateful to no longer have two in diapers (seriously), but I can’t believe my little guy is going to be 3 in 16 days (yep, we started counting down a longgggg time ago)! 😉 Prepare yourself for lots of Gabe talk in the next two weeks as I reflect on his sweet little life, because he’s my boy and I can’t help it! 🙂 I hope you have a wonderful, dry, day! 🙂
