I’m fairly certain that at birth, all my kids’ cute little perfect bodies consisted of 85% peanut butter. It’s no secret that I eat it all. the. time….pregnancy being no exception.

In fact, peanut butter by the spoonful is my snack of choice during labor, so you better believe that this sweet baby girl will have the good stuff running through her veins the first time I hold her in my arms {in the next few weeks, yay}!

This month’s Recipe Redux challenge was to create a recipe using 3 ingredients we already had on hand, a “spring cleaning” of the kitchen if you will! I cheated and used 4 ingredients, {sorry} but I knew right away that I had to put this recipe out there for the world to enjoy.

Grilled Peanut Butter & Jelly: Method

Preheat the griddle! This is absolutely critical! The griddle {or nonstick pan} needs to be hot before tossing the prepared sandwich on it. Why? Because you want your bread to get golden brown without the peanut butter and jelly beginning to ooze out of the sides. Having a preheated cooking surface ensures quick browning which will make your peanut butter and jelly irresistibly melty and delicious without being too messy!

PB&J 1st, Butter last! To avoid a mess, completely make the sandwich before you butter the outside.  I always put peanut butter on both pieces of bread and jam on just one. Because more peanut butter is always better!

Grilled Peanut Butter & Jelly: Substitutions

These sandwiches are totally adaptable for any dietary need!

Bread: Substitute your favorite gluten-free variety if you need to avoid it!

Peanut butter: I am partial to creamy, but any nut butter would be amazing in this sandwich. Crunchy peanut butter, almond butter, sunflower seed butter. Again, let your dietary needs guide your way!

Jelly: When I say jelly I really mean jam. Jam is made with the whole fruit not just the juice, and {in my opinion} is one million percent better. My dad makes homemade jam so that is usually what I use! I also enjoy the kirkland organic strawberry preserves from Costco!

Butter: Spreading some sort of fat source on the outside of your bread is absolutely critical to the perfect Grilled Peanut Butter & Jelly sandwich. Vegan butter spread can be substituted for regular butter if you need to avoid dairy. I highly recommend sticking to one of these two options because the salty buttery flavor really takes this sandwich to the next level.

Grilled Peanut Butter and Jelly Sandwhiches

Total Time: 15 minutes

Yield: 2 Peanut Butter & Jelly Sandwiches

Ingredients

  • 4 slices of bread
  • 4 TBS creamy peanut butter (or crunchy)!
  • 2 TBS strawberry jam (or your favorite jam or jelly)
  • 2 TBS butter, room temperature (or vegan butter)

Instructions

  1. Preheat a griddle to 350 degrees F, or preheat a nonstick pan over medium heat until warm.
  2. While griddle/pan is preheating, make sandwiches:
  3. Take each piece of bread and spread 1 TBS of peanut butter on the sides that will be the middle of the sandwich (the sides that will touch).
  4. Spread 1 TBS of jelly evenly over the peanut butter on two of the pieces of bread.
  5. Put the pieces of bread together to make two sandwiches.
  6. Spread each piece of bread with ½ TBS of butter.
  7. Place sandwich on your preheated griddle or nonstick pan.
  8. Cook for 2-4 minutes or until the sandwich is golden brown.
  9. Flip and cook for another 2-4 minutes until golden brown.
  10. Serve immediately for the best ooey, gooey, melty peanut butter and jelly experience of your life!
