These chocolate brownie bites are rich and fudgy with shiny crinkly tops and gooey centers just like classic brownies! These 2-bite brownies are easy to make from scratch and are the perfect mini dessert for parties!

If there’s one thing in life I take very seriously, it’s brownies. So when I created this brownie bites recipe, there were a few criteria that had to be met for them to be great.

They had to be rich and fudgy, not at all cakey. Plus, they had to still have the shiny crinkly tops that give brownies their amazing texture. And trust me, these fudgy brownie bites are all that and more.

They are rich, gooey, and irresistibly chocolatey—everything you love about brownies in an easy to serve mini size!

Brownie Bites Recipe: Ingredients & Substitutions

  • Semisweet chocolate. You can use chips, bars, discs, etc. because in both the brownie layer and the ganache layer, it’s being melted. You can use dark chocolate or milk chocolate for a richer, sweeter flavor.
  • Salted butter. Unsalted butter works great as well.
  • Granulated sugar. Organic cane sugar works well too!
  • All-purpose flour. Use an all-purpose gluten-free baking flour to make these brownie bites gluten-free.

How to Make Brownie Bites

We’ll walk through this recipe together step-by-step, and don’t forget to to watch the video!

Now let’s start with the pan. I am not someone who likes owning a ton of kitchen supplies. I know that sounds funny because creating recipes is my job. But, I am who I am and it takes a lot for me to buy anything new for baking – so when I say that in order to make the best brownie bites you should just order this silicone mini muffin pan, I mean it!

A silicone pan makes it so easy to remove the brownie bites without needing liners. If you only have a metal mini muffin pan, you should heavily grease them with butter or cooking spray, or use mini muffin liners.

Once your pan is ready, preheat your oven and melt the butter and chocolate together in a microwave safe bowl, or on the stovetop over low heat. Stir until smooth and glossy.

You need this to cool slightly before using in the recipe, so that’s why we go ahead and melt it first.

Now comes the most important steps for achieving the shiny, sugary, crinkly top that is non-negotiable when making brownies and brownie bites. Beat the eggs together for a full minute on high speed. They should be thick and pale yellow when they are done.

Then add the sugar and beat the mixture for another minute. Set a timer if you have to!

Then, stir in the melted chocolate/butter mixture and vanilla until it’s just incorporated (no need to beat for a full minute here).

Next, add the flour, cocoa powder and salt and beat in on low speed until just incorporated. Notice there are no leavening agents in this recipe besides the beaten eggs? This makes the brownie bites nice and fudgy.

Bake & Cool

Fill each well of the muffin tin to the top – this should be about 1.5 Tablespoons in each well.

Then bake for 12 to 15 minutes, or until tops are shiny and set and brownies are puffed.

Finally, transfer the silicone pan to a wire cooling rack and let the brownie bites cool completely in the pan before removing them to serve.

Serve

Pop the brownies out of the pan, put them on a serving tray and serve at room temperature or slightly warm. They make a great addition to any dessert tray or even a Christmas cookie tray!

You can even frost them with your favorite frosting like chocolate buttercream, peanut butter frosting, or coconut frosting.

Store/Freeze

Store extra brownie bites in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 1 month. You can even make this ahead of time for a party and freeze them!

Let them thaw slowly at room temperature, or reheat for a few seconds in the microwave to return the fresh-from-the-oven fudgy texture!

How do I know when brownie bites are done?

The brownie bites will be slightly puffed (they deflate as they cool) and set on the top.

Can I double this recipe?

Yes, you will need a second pan but you can double the ingredients and make more!

Why did my brownie bites turn out dry?

This likely happened because they were overbaked.

Can I add mix-ins?

Because the brownie bites are small, I recommend keeping your mix-ins small. Mini chocolate chips, chopped nuts, etc.

  • Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius)
  • Lightly grease a mini muffin tin (preferably silicone for easy removal).
  • Melt chocolate and butter together in a microwave safe bowl, or on the stovetop over low heat. Stir until smooth and glossy. Set aside.
  • In the bowl of a standing mixer, beat eggs for 1 minute or until pale and thick.
  • Add sugar and beat for an additional 1 minute, until sugar is dissolved.
  • Add melted chocolate/butter mixture and vanilla and stir on low speed until batter is smooth and homogenous (uniform throughout).
  • Add flour, cocoa powder and sea salt and mix until combined.
  • Fill each well of the muffin tin to the top – this is a heaping tablespoon of batter in each well about 1.5 TBS.
  • Bake in the preheated for 12 to 15 minutes. Until tops are shiny and set and brownies are puffed.
  • Transfer the brownie pan to a wire cooling rack and let the brownie bites cool completely in the pan before removing them to serve.
