Maple glazed carrots are an easy, 4-ingredient side dish that only takes 30 minutes to make and tastes like vegetable candy. Carrots with maple glaze are baked in the oven until caramelized and completely irresistible!

When it comes to cooking, I truly believe there is beauty in simplicity. The recipes I make on repeat are those that are easy to make with ingredients I always have on hand, and these maple glazed carrots are one such recipe!

Made with 4 ingredients: carrots, butter, maple syrup, and salt, these carrots with maple glaze are a breeze to put together.

Then, they’re baked in the oven where the glaze starts to caramelize and coat the carrots, bringing out their natural sweetness and making them taste like vegetable candy. The outside becomes crisp and golden while the inside is perfectly soft and delicious for a perfect texture.

Whether you’re making a weeknight dinner or adding a standout side to a holiday meal, glazed maple carrots are the perfect low-effort vegetable side dish even picky eaters love.

Maple Glazed Carrots: Ingredients & Substitutions

  • Carrots. I prefer whole carrots because I think they just taste better than baby carrots. But you can use baby carrots if that’s all you have. You can cut the carrots in whatever shapes you prefer; just remember that smaller pieces bake faster.
  • Butter. You can use olive oil or avocado oil, but butter really adds to the overall flavor of this dish.
  • Maple syrup. Only use pure maple syrup. I don’t recommend substitutions. Or, make my honey-roasted carrots.

How to Make Glazed Maple Carrots

Let’s walk through this recipe together, and don’t forget to watch the video! The first and most time-consuming step is to peel and cut the carrots.

You can prepare the carrots up to 2 days in advance and store them in an airtight container in the refrigerator to make cooking a breeze.

Then, in a small bowl, melt the butter and stir in the maple syrup. Pour the mixture over the prepared carrots.

Then, add the sea salt and stir until the carrots are evenly coated.

Next, evenly spread the maple carrot mixture onto a lightly greased baking sheet in an even layer.

Then, roast the carrots in the preheated oven (set to 425 degrees Fahrenheit or 218 degrees Celsius) for 25-30 minutes, or until the carrots just begin to brown, stirring once halfway through.

I love broiling them in the last 30 to 60 seconds of baking to make sure the glaze really caramelizes and the outsides are golden brown and nice and crispy. You just have to watch them if you do this, because they go from perfectly browned to ruined pretty quickly!

Note on roasting time

The roasting time depends heavily on the size of your carrots. Adjust accordingly and make sure to check them often, especially if you cut them into smaller pieces.

Serve

Serve the glazed maple carrots right away with your favorite dinner recipes. I think they’re the perfect side dish for holidays, served with slow cooker pot roast or meatloaf! Or a weeknight dinner served on the side of pistachio chicken or buttermilk chicken.

Store leftover maple carrots in an airtight container in the refrigerator for up to 5 days. Reheat in the oven, on the stovetop, or in the microwave!

What type of maple syrup is best to use in this recipe?

Only use pure maple syrup (not pancake syrup) for the best flavor. I typically choose grade A or B with great results.

Can I use baby carrots instead of whole carrots?

Yes, you can use baby carrots. However, I feel like baby carrots aren’t as flavorful as whole carrots, so just keep that in mind!

How do I keep the carrots from getting mushy?

Make sure to bake them in a single layer so moisture can escape and steam doesn’t build up and make them mushy. Also, don’t over-bake. Broiling at the end helps brown them without extending cooking time too much.

Should I peel the carrots?

For the best texture, peel the carrots for sure.

Can I make maple glazed carrots ahead of time?

These are best served fresh from the oven. So while you can’t bake them ahead of time, you can prep the carrots by peeling and cutting. Then store the prepped carrots in the fridge until you’re ready to bake and serve.

What herbs or spices pair well with maple glazed carrots?

  • Preheat your oven to 425 degrees Fahrenheit (218 degrees Celsius). Lightly grease a large baking sheet.
  • Peel the carrots and cut them into ½” thick circles.
  • Transfer the carrots to a large bowl.
  • Melt the butter in a small bowl, then add the maple syrup and stir to combine.
  • Stir the butter/syrup into the carrots until they are evenly coated.
  • Sprinkle in salt and stir.
  • Spread the carrots in an even layer on the prepared baking sheet and roast in the preheated oven for 25-30 minutes (depending on the size of your carrots) or until carrots just begin to brown, stirring once halfway through.
  • Broil for 30-60 seconds at the end of baking time. This caramelizes the glaze and makes the outsides golden brown and crispy. Watch them carefully because they brown very quickly.
