These Healthy Vegan Baked Beans with Pineapple are the perfect side dish for your summer BBQ. They are gluten-free and refined sugar free! Kid friendly and husband approved!
I am loving summer! Swimming, hiking, bike riding, and just enjoying some fun in the sun! Having BBQs is one of the activities I love the most {because it involves food…hello}! Nothing beats an evening enjoying delicious food with friends in the great outdoors!
When it comes to BBQs I know that meat is supposed to be the star of the show, and for most people it is! However I would easily pass up a burger or steak for a plate loaded with the traditional BBQ side dishes! Give me all the fruit salad, guacamole, pasta salad, and of course, healthy baked beans!
These Healthy Vegan Baked Beans with Pineapple are one of my favorite side dishes to make. They may not look pretty {sorry I tried LOL} but they sure taste delicious! Plus they are drastically lower in sugar than the beloved store-bought canned varieties! 😉 These healthy baked beans are also gluten, dairy & refined sugar free AND vegan! Perfect for anyone who may drop by for a summer party!

How to make Healthy Vegan Baked Beans from Scratch!
Long baking time.
These healthy baked beans from scratch can be baked from 1-3 hours! Just be sure to keep the baking dish covered until the last 30-60 minutes of baking (depending on how thick you want your beans)!
Variable thickness
Ok folks, we like our vegan baked beans THICK {if you can’t tell from the picture}. The reason: runny beans + little kids = big messes. To make these healthy vegan baked beans extra thick, simply bake them longer with the lid off. If you like your healthy baked beans a little more runny, simply keep them covered or bake for a shorter amount of time!
Healthy Vegan Baked Beans from scratch: Substitutions
I have tinkered with this recipe for a long time to get it just the way we like it! But here are a few potential substitutions!
- Great Northern Beans: These are our favorite variety of beans to use in this recipe, but you can use two cans of any type of beans. I recommend great northern, kidney or black beans.
- Crushed Pineapple: In order to avoid chunks, it’s important to use crushed pineapple. If you don’t have a can on hand, you can toss pineapple chunks (fresh or canned) into your blender or food processor to achieve the correct consistency!
- Coconut sugar: Regular brown sugar can be substituted for coconut sugar, however then the dish would not be refined sugar free!
- Dijon Mustard: Feel free to substitute your favorite mustard flavor, however we like dijon best!

Vegan Baked Beans
Ingredients
- 2 15 oz cans of great northern beans, rinsed and drained (about 3 cups)
- 1 ½ cups crushed pineapple canned or fresh
- 15 oz can tomato sauce
- 2 TBS molasses
- ¼ cup coconut sugar
- 2 TBS Dijon mustard
- 1 ½ tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp sea salt
- ¼ tsp freshly ground black pepper
- 2 TBS apple cider vinegar
- 2 TBS Worcestershire sauce
Instructions
- Preheat oven to 350°F and grease a 2 or 3-quart baking dish with nonstick spray.
- Mix all ingredients together in a big bowl and pour into the baking dish.
- Bake covered for 1 hour.
- Remove the cover and bake an additional hour, stirring occasionally.
- You can continue baking for up to one more hour, depending on how thick you would like your consistency to be.
- Let sit for 20 minutes before serving!
- Can be stored in an airtight container in the refrigerator for up to 3 days!

Something important to note. If you are used to canned baked beans that are loaded with sugar, you might feel like these Healthy Vegan Baked Beans with Pineapple aren’t sweet enough. This is not a copycat recipe, rather it is a healthier alternative that I think is even more delicious and flavorful than the store-bought varieties!

This has been a huge hit during our recent family barbeque. Just like you, I also tried to make it look more appealing but was not really successful. Glad that its taste was able to compensate — everyone loved it.

I love pasta salad, but baked beans are so good too. I’ve never had really thick baked beans, so these sound really good. 🙂 I totally agree that summer BBQs are some of the best events.
