Happy Thursday everyone! Only one more day until the weekend and I’m sooo ready for it! Today I am sharing one of the most delicious {non-sweet} recipes to ever come out of my kitchen! Seriously!  These Balsamic Roasted Vegetable Wraps are what dreams are made of! They are a literal flavor explosion and are so healthy you can feel great about eating them for breakfast, lunch AND dinner!

Since this happened to me…{LOL} I have been on a total sandwich and wrap kick. I have also had an aversion to all raw vegetables, but I could eat an entire pan of veggies if they’re roasted! Since my cravings haven’t been so healthy {potato chips and pickles…so stereotypical but I so don’t care}, I have had to work extra hard to fuel my body with good foods that I actually enjoy.

These wraps totally hit the spot. With an all-star cast of ingredients, you can see why I am head-over-heels for this Balsamic Roasted Vegetable Wrap…

  • Red and green peppers roasted in sweet balsamic vinegar {YUM}
  • Roasted sweet potatoes add a salty sweetness
  • Avocado and goat cheese impart irresistible creaminess
  • Sun-dried tomatoes deliver a flavor punch
  • Lettuce for a little crunch
  • And Sabra Garlic Herb Hummus Spread brings it all together beautifully!

This list may seem long…but don’t let it scare you away! The only “work” involved in this recipe is roasting the veggies…which really is super simple!

What sets this wrap apart is the addition of the Garlic Herb Spread from Sabra! Slathering it all over the wrap before adding your ingredients insures that it will hold together well for easy-eating!  This spread imparts a bold and rich flavor using fresh, good-for-you ingredients! It’s SO much healthier for you than the traditional sandwich additions (like mayonnaise)! I also love that I can just squeeze it onto my wrap and call it done! No mess or fuss, which is paramount for a busy (pregnant) momma like myself!

A few dietary modifications: If gluten isn’t your friend…simply choose a wrap that is gluten-free! If you avoid dairy or follow a vegan diet…simply omit the goat cheese! Really, this wrap can be all things to all people!

Balsamic Roasted Vegetable Wrap

45 minutes

Total Time: 55 minutes

Yield: 4 large wraps

Ingredients

  • 2 medium red bell peppers
  • 1 medium green bell pepper
  • 1 large sweet potato
  • 2 TBS olive oil (divided)
  • 1 TBS high quality balsamic vinegar*
  • ¾ tsp salt (divided)
  • 2 TBS sun dried tomatoes packed in olive oil
  • 1 avocado
  • Green leaf lettuce
  • 4 oz goat cheese
  • 4 TBS Sabra Garlic Herb Spread
  • 4 wraps or tortillas

Instructions

  1. Preheat oven to 425 degrees F. Great two large baking sheets and set aside.
  2. Roast Vegetables:
  3. Sweet Potatoes:
  4. Dice sweet potato into large cubes and place in a mixing bowl. Add 1 TBS olive oil and ½ tsp salt and mix until evenly coated.
  5. Pour onto one of the prepared baking sheets and place in the preheated oven. Bake for 20 minutes. Stir and bake for an additional 20-30 minutes, stirring occasionally.
  6. When sweet potatoes are golden brown remove from oven and set aside.
  7. Peppers:
  8. Cut bell peppers into strips and place in a large mixing bowl.
  9. Add 1 TBS olive oil and stir to coat. Add ¼ tsp salt and stir to combine.
  10. Spread peppers evenly on the prepared baking sheet.
  11. Place in preheated oven and roast for 15 minutes.
  12. After 15 minutes remove pan from oven and add 1 TBS balsamic vinegar. Stir until all the peppers are evenly coated.
  13. Roast for another 15-20 minutes, stirring every 10 minutes until the peppers are roasted. Remove from oven and set aside.
  14. Making the wraps:
  15. Lay out your 4 wraps.
  16. Add 1 TBS Sabra spread to each wrap and spread evenly.
  17. Place lettuce on top of wrap, followed by sun-dried tomatoes, roasted veggies, avocado and goat cheese.
  18. Roll up the wraps and ENJOY!

Notes

*I only ever recommend using the highest quality balsamic vinegar. It must be thick, rich and sweet.

I can’t tell you enough how much I enjoy this Roasted Balsamic Vegetable Wrap! I have made it multiple times since I first created it! Helpful hint: roast a giant batch of veggies and store the extras in the fridge. You can simply re-heat them and have a delicious lunch ready in 5 minutes! Yay!
