I cannot get over how much I love Christmas! This year our kids are a special kind of fun, and it’s so exciting knowing we have another little one on the way! I always wonder what our “final” family dynamic will be. You know…how many kids will we have? What genders will they all be? What will our family look like 10 years from now? One thing I know for certain, we are immensely enjoying the journey to get there, and have so much joy just living in the present!

Any-who, when I think about Christmas I can’t help it that this Walnut Cinnamon Swirl Bread always pops into my head. It is a very special and elegant holiday treat that is the perfect gift to bring wrapped up, still warm from the oven, to a neighbor or friend.

My sweet friends over at Vitamix sent me a Dry Grains Container to accompany my new blender and I’m in love! I literally make just about everything in my Vitamix, and now my life is complete because I can also make bread with it…something I never realized was possible! Sure, I’ve made batter for a quick bread or muffins, but never thought of using my Vitamix to knead yeasted bread! Well let me tell you it is amazing! I chose to make this Walnut Cinnamon Swirl Bread as a special treat! It has a few steps, so let’s walk through them together!

First, prepare the wet ingredients (melt the butter, scald the milk, etc)! The most important thing to note about this process is to make sure that your ingredients are below 105 degrees F before combining them with the yeast. Once that prep work is finished, add the dry ingredients to the dry grains container and pulse until a hole forms in the middle, like this…

Next, pour the wet ingredients into the hole and pulse to combine and knead the dough. You will  alternate pulsing {for no more than one second at a time} and scraping down the sides of the container 5-10 times until a dough forms. It is very important that you do not pulse for more than a second or you run the risk of overheating the dough and killing the yeast. At the very end, pulse for about 5 seconds to lift the dough off the blade, it should look like this…

Next, transfer the dough to a floured surface and make a smooth ball. Place it in an oiled bowl and let it rise for 1.5 to 2 hours (or until doubled in size). While your dough is rising, use the wet container {the standard container that comes with every Vitamix} to make the filling. Let the filling stand-covered-at room temperature until the rise is complete!

Next comes the rolling and assembling. Roll out your dough into a large rectangle and gently spread the filling over it, leaving a little space at the edges bare. Tightly roll your dough into a jelly roll, making sure to apply ample pressure to ensure a tight roll.

Take the rolled dough “rope” and stretch it just a touch. Then form it into an “S” shape in your prepared baking pan. This is what gives this Walnut Cinnamon Swirl Bread it’s beautiful appearance! At this point let the bread sit, covered, while you preheat the oven and get ready to bake!

Pop your bread in the oven once it’s preheated, and after 15 minutes, decrease the temperature and continue baking for about 45 more minutes! When it is finished, place the bread in the pan on a wire rack to cool. This Walnut Cinnamon Swirl Bread is heavy, so it is very important to leave it in the pan while it cools so that it retains its shape.

Once it’s completely cool dive on it! Carefully slice the bread and share with your family and friends! I have made this Walnut Cinnamon Swirl Bread countless times, and I have to say that using the Vitamix made the whole process much easier! It especially cut down the time it took to make the filling, since the Vitamix is powerful enough to heat the milk AND chop the walnuts!

Notes about substitutions: 

As always this recipe for Walnut Cinnamon Swirl Bread is absolutely the best when made as written. The only potential substitution I could {in good conscience} recommend is using pecans in place of walnuts if you’re not a walnut fan! Otherwise I’d say enjoy a little splurge and make this bread for your family! Or, bake it, wrap it up, and bring it to a neighbor or friend as a gift! It truly is  a gift that spreads holiday love whenever it is given!

You can easily double (or triple) this recipe to make more loaves to share with your loved ones!

Cinnamon Walnut Swirl Bread (Povitica)

Total Time: 3 hours

Yield: 1 9x5" Loaf

Ingredients

Instructions

    Make the dough:
  1. In a small bowl, stir sugar, and yeast into warm water. Set aside until foamy (about 5 minutes)
  2. In a medium saucepan, heat the milk to just below boiling (about 180°F), stirring occasionally. Allow to cool slightly, until it is about 110°F.
  3. Once cooled, whisk in the melted butter, sugar and salt to the milk until combined. Add egg, vanilla and yeast mixture and stir to combine.
  4. Add flour into the Vitamix Dry Grains Container and pulse until a hole forms in the middle.
  5. Pour wet ingredients into the hole in the flour in the Vitamix and pulse for 2 seconds. Scrape down the sides and pulse again.
  6. Repeat this process (pulse for 2 seconds the scrape down sides) until the ingredients are combined and form a dough. (Be careful not to pulse longer than 2 seconds or the dough could become too warm and kill the yeast)!
  7. Add up to 2 TBS more flour until dough is smooth and no longer sticky.
  8. Turn dough out onto a lightly floured surface and form into a ball.
  9. Place dough in a lightly oiled bowl and cover with a warm, damp tea towel.
  10. Let the dough rise for 1.5 hours in a warm place, or until doubled in size.
  11. Make the filling:
  12. While the dough is rising, put the milk and butter into the wet container of your [Vitamix|http://vitamixtrack.com/click.track?CID=292558&AFID=417333&ADID=1450715&SID=&NonEncodedURL=

  14. Blend on medium-high speed until mixture is hot and steam is coming out of the Vitamix (2-4 minutes).
  15. Add Walnuts, sugar, salt, and cinnamon and pulse a few times until the ingredients are combined and walnuts are crushed into smaller pieces.
  16. Add egg yolk and vanilla and pulse to combine.
  17. Allow mixture to stand at room temperature until dough is ready.
  18. Putting it together:
  19. Line a 9x5” loaf pan with parchment paper and grease with butter. Set aside.
  20. After the dough has doubled in size, remove it from the bowl and place on a well-floured surface.
  21. Roll the dough into a rectangle about 18” by 17” in size. Be sure dough is thin but not so thin that you can see through it (about ¼” thick).
  22. Spread the filling evenly on the dough, leaving about 1/2” at the edges bare. (If your filling has become too thick to spread, add warm milk ½ TBS at a time until it just reaches spreading consistency).
  23. Staring at the edge of your rectangle, roll the dough tightly together making a jelly roll (see picture). Be sure to apply pressure and keep rolling tightly until it resembles a rope.
  24. Gently stretch out the “rope” and lift it into your prepared loaf pan, making an “S” shape as you put it in. (To do this, fold the dough into thirds in your pan (see pictures)).
  25. Cover the pan with a damp towel and let it sit in a warm place for at least 15 minutes while you preheat your oven to 350 degrees F.
  26. Bake for 15 minutes at 350 degrees.
  27. After 15 minutes turn down the oven to 300 degrees F and bake for an additional 45 minutes (about 1 hour total), or until done (will sound hollow when hit with a wooden spoon). Check your bread after about 30 minutes and cover with aluminum foil if it is getting too brown.
  28. Remove bread from the oven. Cool for 20-30 minutes on a wire rack before removing from pan.
  29. Cool completely before cutting and serving!

Notes

I do not recommend any substitutions in this recipe. This recipe is easily doubled or tripled to make more loaves to share with loved ones!
