Breakfast is, hands down, my favorite meal of the day.

I think it’s because, in my house, during breakfast peanut butter is always the star of the show. Whether it’s in a smoothie, baked in a bar, or made into a fun healthy breakfast like these Blender Peanut Butter Banana Oatmeal Waffles…peanut butter is the best part of waking up {in my humble opinion}!

These gluten-free Oatmeal Waffles are seriously healthy and seriously delicious. They are gluten, dairy and refined sugar-free, have zero butter or oil, and are loaded with fiber and protein! A truly special recipe to make on a lazy Sunday morning, that won’t leave you in a sugary carb-a-licious coma for the rest of the day!

Peanut Butter Banana Oatmeal Waffles: Substitutions

  • Peanut Butter: any nut or seed butter works well in this recipe.
  • Old-fashioned oats: 1 cup of oat flour is a great substitute for oatmeal. Or, use all-purpose flour.
  • Cornstarch.  tapioca flour or all-purpose flour are goo substitutes.
  • Whole milk: 2% milk, half and half, almond milk and coconut milk all work great.
  • Granulated sugar: white sugar, organic cane sugar and coconut sugar are all great choices.

Then, cook the waffles in your waffle maker, set to medium high until they are golden brownn.

When I shot these, I made cute scenes on the waffles for my kids. Full disclosure, that was when I had three kids (now I have 6) and I don’t do things like this anymore! But, I thought I’d share because they were pretty cute, and a fun idea if you have extra energy at breakfast time.

Store

Cool leftover waffles completely, then store them in an airtight container in the refrigerator for up to 5 days. Reheat in the toaster.

Freeze

I suggest freezing these banana oatmeal waffles to keep them fresh. Put cooled waffles in a single layer in an airtight container and freeze for up to 2 months. You can stack them if you separate the layers with waxed or parchment paper.

Ingredients 
 

Instructions 

  • Preheat a waffle maker to medium-high heat.
  • Place oats into the container of a high-powered blender and secure lid. Blend for 15 seconds or until they become a fine powder (the consistency of flour).
  • Pour oat flour into a medium mixing bowl.
  • Add cornstarch, baking powder, baking soda, salt cinnamon and sugar to the oat flour and stir to combine. Set aside.
  • Put almond milk, peanut butter, banana, vanilla and egg in the container of a high-powered blender and secure the lid.
  • Blend on low speed, gradually increasing to high. Blend on high for 15 seconds or until the mixture is smooth.
  • Add the dry ingredients and blend until smooth.
  • Let mixture sit for 2-5 minutes to thicken.
  • Pour mixture into the preheated waffle maker, 1 cup at a time (or whatever amount is appropriate for the size of your waffle maker).
  • Cook on medium-high heat in your waffle maker for about 4 minutes, or until your waffles reach the optimal crispiness and brownness, which will vary depending on your waffle maker.
  • Serve warm.

    I tried it and these were excellent! I used evaporated milk as that’s all I had. I used my food processor to blend the wet ingredients. Packaged oat flour as I have so much of it. I added chocolate chips and used my muffin pan. Thank you for a great recipe!

  2. I mixed ingredients in a regular blender, grinding the oats first. I used the cornstarch and Monk fruit. They turned out great.

  3. I NEED THIS NEW MODEL ; MY 1ST PURCHASEBD RECONDICTION ONE WORKS, BUT THE FEATURES ON THE 3500 MODEL WOULD BE A TIME SAVER WHEN I HAVE TO STOP IN THE MIDDLE OF WAFFLE /SMOOTHIE MAKING TO RUN AND ASSIST MY MOM WHO IS GETTING WELL AND SO I CAN STAY WELL IN THE PROCESS. THANKS SOOO MUCH .

  4. Unfortunately, this recipe was not a success 🙁 In replace of an egg I used a flax egg & the batter looked like it was suppose too. Also for a waffle maker I have an Oster. Not sure if that’s why the waffles didn’t turn out? If so, that’s ridiculous! Disappointed in the waste of ingredients!!!!

    1. Hello Amanda! I do not recommend using a flax egg in place of a real egg in this recipe. I am sorry it didn’t turn out for you but that is almost definitely the reason why!
