These peanut butter banana oatmeal waffles are a delicious, gluten-free breakfast. They’re easy to make in the blender!
Breakfast is, hands down, my favorite meal of the day.
I think it’s because, in my house, during breakfast peanut butter is always the star of the show. Whether it’s in a smoothie, baked in a bar, or made into a fun healthy breakfast like these Blender Peanut Butter Banana Oatmeal Waffles…peanut butter is the best part of waking up {in my humble opinion}!
These gluten-free Oatmeal Waffles are seriously healthy and seriously delicious. They are gluten, dairy and refined sugar-free, have zero butter or oil,ย and are loaded with fiber and protein! A truly special recipe to make on a lazy Sunday morning, that won’t leave you in a sugary carb-a-licious coma for the rest of the day!
Peanut Butter Banana Oatmeal Waffles: Substitutions
- Peanut Butter: any nut or seed butter works well in this recipe.
- Old-fashioned oats:ย 1 cup of oat flour is a great substitute for oatmeal. Or, use all-purpose flour.
- Cornstarch. ย tapioca flour or all-purpose flour are goo substitutes.
- Whole milk:ย 2% milk, half and half, almond milk and coconut milk all work great.
- Granulated sugar:ย white sugar, organic cane sugar and coconut sugar are all great choices.
How to Make Banana Oatmeal Waffles
Let’s discuss how to make banana oatmeal waffles.
Begin by blending the ingredients in a high-powered blender (Vitamix).
Then, cook the waffles in your waffle maker, set to medium high until they are golden brownn.
Serve
Serve these peanut butter oatmeal waffles warm with your favorite toppings. Here are some suggestions:
- With a glug of pure maple syrup and pat of butter orย cinnamon honey butter.
- Topped with a dollop ofย homemade whipped cream.
- With a side of fresh berries or other fruit
- Drizzled with Nutella,ย peanut butter, etc.ย
When I shot these, I made cute scenes on the waffles for my kids. Full disclosure, that was when I had three kids (now I have 6) and I don’t do things like this anymore! But, I thought I’d share because they were pretty cute, and a fun idea if you have extra energy at breakfast time.
Store
Cool leftover waffles completely, then store them in an airtight container in the refrigerator for up to 5 days. Reheat in the toaster.
Freeze
I suggest freezing these banana oatmeal waffles to keep them fresh. Put cooled waffles in a single layer in an airtight container and freeze for up to 2 months. You can stack them if you separate the layers with waxed or parchment paper.

Peanut Butter Banana Oatmeal Waffles
Ingredients
- 1 cup old fashioned oats (or oat flour)
- 2 Tablespoons cornstarch
- ยฝ teaspoon baking powder
- ยผ teaspoon baking soda
- ยผ teaspoon sea salt
- ยผ teaspoon ground cinnamon
- ยพ cups whole milk (or almond milk)
- ยผ cup creamy peanut butter
- 1 banana ripe
- 1 egg
- 2 Tablespoons granulated sugar
- ยฝ teaspoon pure vanilla extract
Instructions
- Preheat a waffle maker to medium-high heat.
- Place oats into the container of a high-powered blender and secure lid. Blend for 15 seconds or until they become a fine powder (the consistency of flour).
- Pour oat flour into a medium mixing bowl.
- Add cornstarch, baking powder, baking soda, salt cinnamon and sugar to the oat flour and stir to combine. Set aside.
- Put almond milk, peanut butter, banana, vanilla and egg in the container of a high-powered blender and secure the lid.
- Blend on low speed, gradually increasing to high. Blend on high for 15 seconds or until the mixture is smooth.
- Add the dry ingredients and blend until smooth.
- Let mixture sit for 2-5 minutes to thicken.
- Pour mixture into the preheated waffle maker, 1 cup at a time (or whatever amount is appropriate for the size of your waffle maker).
- Cook on medium-high heat in your waffle maker for about 4 minutes, or until your waffles reach the optimal crispiness and brownness, which will vary depending on your waffle maker.
- Serve warm.

a smoothie… with ICE! i love smoothies with ice but my current blender doesn’t blend ice very well… so i usually omit.
We have a Vitamix, and we love it so much. It’s so powerful to make smoothies, batter, grind up grains to make flour; it’s just the best most versatile blender/kitchen tool ever.

First thing I’d make? A bunch of different homemade nut butters in a bunch of different flavors! I currently have a stock of almonds, pistachios, pumpkin seeds and walnuts at home and need to use them up.
