Breakfast is, hands down, my favorite meal of the day.

I think it’s because, in my house, during breakfast peanut butter is always the star of the show. Whether it’s in a smoothie, baked in a bar, or made into a fun healthy breakfast like these Blender Peanut Butter Banana Oatmeal Waffles…peanut butter is the best part of waking up {in my humble opinion}!

These gluten-free Oatmeal Waffles are seriously healthy and seriously delicious. They are gluten, dairy and refined sugar-free, have zero butter or oil,ย and are loaded with fiber and protein! A truly special recipe to make on a lazy Sunday morning, that won’t leave you in a sugary carb-a-licious coma for the rest of the day!

  • Peanut Butter: any nut or seed butter works well in this recipe.
  • Old-fashioned oats:ย 1 cup of oat flour is a great substitute for oatmeal. Or, use all-purpose flour.
  • Cornstarch. ย tapioca flour or all-purpose flour are goo substitutes.
  • Whole milk:ย 2% milk, half and half, almond milk and coconut milk all work great.
  • Granulated sugar:ย white sugar, organic cane sugar and coconut sugar are all great choices.

Then, cook the waffles in your waffle maker, set to medium high until they are golden brownn.

When I shot these, I made cute scenes on the waffles for my kids. Full disclosure, that was when I had three kids (now I have 6) and I don’t do things like this anymore! But, I thought I’d share because they were pretty cute, and a fun idea if you have extra energy at breakfast time.

Store

Cool leftover waffles completely, then store them in an airtight container in the refrigerator for up to 5 days. Reheat in the toaster.

Freeze

I suggest freezing these banana oatmeal waffles to keep them fresh. Put cooled waffles in a single layer in an airtight container and freeze for up to 2 months. You can stack them if you separate the layers with waxed or parchment paper.

Ingredients 
 

Instructions 

  • Preheat a waffle maker to medium-high heat.
  • Place oats into the container of a high-powered blender and secure lid. Blend for 15 seconds or until they become a fine powder (the consistency of flour).
  • Pour oat flour into a medium mixing bowl.
  • Add cornstarch, baking powder, baking soda, salt cinnamon and sugar to the oat flour and stir to combine. Set aside.
  • Put almond milk, peanut butter, banana, vanilla and egg in the container of a high-powered blender and secure the lid.
  • Blend on low speed, gradually increasing to high. Blend on high for 15 seconds or until the mixture is smooth.
  • Add the dry ingredients and blend until smooth.
  • Let mixture sit for 2-5 minutes to thicken.
  • Pour mixture into the preheated waffle maker, 1 cup at a time (or whatever amount is appropriate for the size of your waffle maker).
  • Cook on medium-high heat in your waffle maker for about 4 minutes, or until your waffles reach the optimal crispiness and brownness, which will vary depending on your waffle maker.
  • Serve warm.

  1. OH my.. so excited about this. Been eyeing on a vitamix since i’ve heard so much goods about it and I need one to make everything it possibly can! But the first thing I would try is the frozen yogurt because my daughter loves yougurt and I want to give her a more healthy home made version. Thanks for a chance!

  2. I’ve been into all things bean lately. So I’d make actually smooth versions if hummus, black bean brownies, chickpea cookies and whatever else strikes my fancy!

  4. A smoothie with kale. Currently I use a food processor and the smoothies with kale are too chunky!

    1. Oohhh noo!!!! A food processor is no place to make a smoothie!!!! You definitely need a vitamix!
