This gluten-free hash brown crust quiche is an easy, healthy & filling recipe! Eat it as a protein-packed breakfast or quick dinner. It’s easy to prepare in advance & vegetarian friendly!
I usually opt for a sweet breakfast, but when I need something savory egg dishes are my go to – like this hash brown crust quiche recipe.
I also love making eggs for lunch & dinner. They’re so versatile and can be made in so many ways – (try this omelette, frittata recipe, egg bake (egg casserole) and this crustless quiche)!

Using hash browns for the crust makes this recipe naturally gluten-free, hearty & filling. It’s easy to prepare in advance and serve warm or cold on special mornings.
Gluten-Free Hash Brown Quiche Recipe: Ingredients & Substitutionsย
- Frozen hash browns. You can make your own hash browns with any variety of potato you choose.
- Butter.ย olive oil is a great substitute for butter.
- Milk. Any variety of milk works well – whole or 2% are preferred. Or use heavy cream or half and half.ย
- Mustard.ย use your favorite variety.ย
- Bell Peppers.ย Substitute your favorite vegetables. Suggestions include: broccoli, zucchini, cauliflower, carrots, spinach, asparagus, etc.
- Cheddar cheese.ย choose your favorite cheese variety – they all taste delicious.
- Bacon.ย You can omit bacon for a vegetarian option. If you do, cook the veggies in 2 Tablespoons olive oil before adding them to the egg mixture. You may also need to increase the amount of salt in the recipe if you choose to omit bacon. You can also substitute breakfast sausage, ham, or another meat.
How to Make Hash Brown Quiche

Make the Hash Brown Crust
The hash brown crust needs to bake before being used in this recipe – so we begin by making the crust!
Mix together hash browns, butter, salt and pepper.
Then press the mixture into a pie dish and bake in the preheated oven for 10 minutes.
Shape the crust after 10 minutes of baking.ย If you use frozen hash browns without thawing them you will need to remove the crust after 10 minutes of baking and shape it to the pan with the back of your spoon. Be sure to press it into the bottom and sides of your pie dish. This will ensure that there are no cracks for the egg filling to seep through.
Bake for an additional 20-25 minutes, or until the crust just begins to brown then set aside.
Make the Filling
While the crust is baking, make the filling.
Begin by cooking the vegetables until soft. If you use bacon, cook the bacon until it begins to brown and release fat.
Then add the vegetables and cook until soft. If you do not use bacon, cook the vegetables in 2 Tablespoons of olive oil or butter.
Set the cooked vegetables aside to cool.
While the vegetables are cooling, make the egg mixture by whisking the eggs, milk, mustard, salt, paprika and pepper together in a large bowl.
Then, add the cheese and cooked vegetable mixture and stir to combine.
Pour the filling into prepared hash brown crust.
Top with sliced tomatoes if desired, and bake for 35-45 minutes or until filling is set and the top is golden brown.
Let cool for at least 1t minutes before serving.
Serve
Let the hash brown crusted quiche cool for at least 15 minutes before serving sightly warm with your favoriteย breakfast recipes. Here are some suggestions:

Ingredients
Crust:
- 15 ounces frozen hash browns
- 2 Tablespoons salted butter (melted)
- ยฝ teaspoon sea salt
- ยผ teaspoon pepepr
Filling:
- 6 large eggs
- ยฝ cup milk
- 1 Tablespoon mustard
- ยฝ teaspoon fine sea salt
- ยผ teaspoon pepper
- ยผ teaspoon paprika
- 4 slices bacon (diced)
- 1 Tablespoon minced garlic
- 1 green bell pepper (finely diced)
- 1 red bell pepper (finely diced)
- 1 cup cheddar cheese
- 1 medium tomato (sliced thin)
Instructions
Make the Hash Brown Crust
- Preheat oven to 400 degrees F.
- Grease a 9โ round pie plate and set aside.
- Mix together hash browns, butter, salt and pepper.
- Press into the prepared pie plate.
- Bake in the preheated oven for 10 minutes, remove crust and use a metal spoon to press it into the pan and shape the edges.
- Bake for an additional 20-25 minutes (30-35 minutes of total bake time) or until the crust just begins to brown then set aside.
Make the Filling
- Once the crust is baked, reduce oven temperature to 350 degrees F.
- Cook the diced bacon in a sautรฉ pan over medium-high heat, stirring occasionally, until it just begins to brown.
- Add the minced garlic, onion, and bell peppers and cook until soft and bacon is browned (about 4-5 minutes).
- Remove from heat and let cool slightly.
- In a large bowl, whisk together eggs, milk, mustard, salt, paprika and pepper.
- Add cheese and stir to combine.
- Add the cooked vegetable mixture and stir.
- Pour the filling into prepared hash brown crust.
Bake
- Top with tomato slices and bake in the preheated oven (set at 350 degrees F). for 35-45 minutes or until filling is set and the top is golden brown.
- Let cool for at least 15 minutes before serving warm. Or store in the refrigerator and serve cold.

I love the idea of a hash brown crust. I usually make my quiche crustless but this would be really good for a change. I’ve also done sweet potato which is pretty good, too.
