2017 has been an amazing year here for this little blog of mine! I couldn’t be more grateful for those of you who make my recipes and come back to let me know you enjoyed them! So in case you’ve just recently joined the part here {hi! :::waves:::} here is what’s been going on and what you’ve all loved this year….in short…The top 10 recipes from JoyFoodSunshine 2017!
#10: Flourless Paleo Brownies
These beauties definitely rank in my personal top 3 favorite recipes from 2017 {and quite possibly of all time}! They are healthier brownies that truly no one would ever guess were anything but decadent. This is my go-to dessert when we have guests over for dinner!
Brooke says, “I just made these and OMG, they are possibly the best brownie I’ve ever had! Who knew a flourless brownie could be this spectacular. Thanks for this new favorite recipe.”
Kara says, “These are amazing!! They are like a mix between flourless chocolate cookies and chocolate cheesecake (seriously, eat these straight out of the fridge and it tastes like chocolate cheesecake!). So rich and delicious…”
Kate says: I hardly ever bake and I’m pretty terrible in the kitchen but this was incredibly easy and turned out delicious!
#9: Mini No-Bake Vegan Chocolate Cheesecakes
I created these as a spin on one of my favorite recipes that I got from a woman at our church many years ago. Her version is classic {with cream cheese, sugar, etc.} and I set out to create a dessert that was equally as delicious and elegant but easier on the digestive system! 😉

#8: Healthy Slow Cooker Chicken Chili
You all actually loved the older post for this recipe, but since it is one of my favorite recipes EVER, I had to update it to make it prettier and a little more SEO friendly {my blogging friends understand that}! Never fear, I kept the recipe itself exactly the same. This is my go-to meal when we have people over for dinner or when I need to take a meal to someone {like after they have a baby}!
“This chili really can be all things to all people.” your passion is the best. and it’s totally true. there is no better chili than mom’s chili. <- yep that’s my sister’s comment! 😉
#7: Baked Sweet Potato & Black Bean Veggie Burgers
I LOVE having these on hand in the freezer and have been making them for many, many years! I’m so glad you all love them too! One of my favorite things about them is their versatility!

#6: Vegan Peanut Butter Frosting!
This is one of my favorite recipes EVER. I’m so glad you all love it too! I make this embarrassingly often, like once a week. Because it’s just THAT good.
Hannah said, “I made this tonight to frost a dairy-free chocolate cake. It is amazing!”
#5 Blueberry Baked Oatmeal
You all love baked oatmeal, and for a good reason! What’s better than baking once and enjoying a dish for breakfast all week long! Plus this version is super healthy and packed full of protein!
Dani says, “Just wanted to thank you for this recipe! I think it has changed my life (not kidding). My husband, 1 year old and I all love it and feeds us all week!”
#4: No Bake Vegan Chocolate Peanut Butter Cheesecake
One of my favorite creations of this year and you all have gone nuts over it! I have loved seeing you tag me in your photos of this beauty on Instagram! It’s a special dessert for the special person in your life {or for yourself on a Tuesday}! 😉
Sandy Says, “It was surprisingly easy to make and everyone loved it! I like it better than non-vegan cheesecake because it doesn’t make me feel disgustingly full. I actually made one for a party and one for myself to keep in the freezer and eat whenever I’m in the mood! Such a scrumptious healthier treat that satisfies the treat craving.”
#3: Healthy Greek Yogurt Brownies
These are a staple in my house and I’m not surprised to see this recipe come in at number three! If you like fudgy, insanely chocolatey brownies that are a tad healthier than traditional varieties, then these are for you!
Sophie says, “I just made these brownies following this recipe and I’m so shocked at how amazing they have turned out! They are yummy!”
#2 Crunchy Roasted Chickpeas
You all LOVE these! We enjoy them as a healthy snack or in place of croutons in salads!
Allie says, “Oh my gosh! I’ve never been able to get them as crunchy as I like without cooking them over an hour. Cooking them “naked” made this my best batch yet!”
#1 Healthy Peanut Butter Granola
I think it’s so fun that the very first recipe I posted in 2017 was your favorite! And for good reason! We love this granola served over yogurt or with a splash of almond milk!
Sonya says…” So I made this last week. It needs to come with a serious warning label like ” Caution: you will find yourself randomly walking into the kitchen to steal small handfuls of this..only to come right back in for a larger portion” Something like that..lolIt’s crazy delicious. I’ve eaten it by the handfuls, on top of my Greek yogurt..but mostly bu handfuls Thank you so much for the recipe! It will be made often “

I can see why you make the Vegan PB frosting so much; it looks SOOO good. I LOVED your PB Granola and Cheesecake, and it looks like there are more beauties I can make from here this coming year; I’m just amazed at how God gave you such a gift to produce so many recipes with so many sweet children in your house Laura; thank you! The cheesecake was an amazing creamy delicious cheesecake; you couldn’t really tell it didn’t have cream cheese. And the PB granola is hands down, my favorite either. It’s crunchy; it has great clusters, and the PB Flavor is so strong!
