Beet & Pomegranate Smoothie

In this pomegranate smoothie recipe, pomegranates, beets, spinach and bananas are blended together for a delicious & nutritious breakfast, rich in antioxidants.
Around here we drink smoothies all year long! I love creating healthy, smoothie recipes with in-season fruits & veggies. This beet & pomegranate smoothie recipe includes two of my favorite winter produce items; beets and pomegranates!
This pomegranate smoothie is packed full of antioxidants, fiber, fruits and veggies so you can start the day energized!
Plus, if you give it a fancy name like Santa Slush or Rudolph Fuel – it can be a great addition to a Christmas breakfast. One morning my son took a sip and exclaimed, “Mom this isย so good! Can you make it every day”
Pomegranate Smoothie: Ingredient Substitutions
- Almond milk. Substitute any milk you’d prefer in this recipe – dairy milk, coconut milk, oat milk etc.
- Honey.ย If you like your smoothies a bit more tart you can omit the honey. I have found that in order for my kids toย love smoothies I need to add at least 1 Tablespoon of honey. Use maple syrup for a vegan version.
- Spinach. Any leafy greens work well in this recipe! I suggest spinach and kale.
How to Make a Pomegranate Smoothie
This recipe is as easy as putting all the ingredients in a blender and turning it on! As always, I recommend using a Vitamix to make your smoothies.
Put the ingredients in the order listed in the recipe card into the blender – always begin with liquid ingredients (except honey).
Serve

You can use pomegranate juice, however you will miss out on the fiber from the seeds.

Beet & Pomegranate Smoothie
Ingredients
- 1 cup unsweetened vanilla almond milk
- ยฝ banana (frozen)
- ยผ cup fresh pomegranate seeds
- ยผ cup beets (fresh, raw & diced)
- 1 Tablespoon honey (or to taste)
- 1 cup spinach (frozen)
Instructions
- Place the ingredients in the order listed into the container of a Vitamix (or other high-powered blender).
- Blend starting on low speed and increasing to high for 60-90 seconds or until smooth.
- Pour and serve immediately.

Done this smoothy and accidentally used cooked Beetroot instead of raw…so I am wondering whether that has offset the colour a bit since mine ended up looking quite dull in colour and certainly not the vibrant red that is shown on the picture. The taste is nice however.

I added regular milk, didn’t add any banana or spinach, coz I had neither. The taste could have been better, but I can’t blame the recipe for that. Still looking for a pomegranate recipe my kid would like. Thanks a bunch for this one. It was promising.
